Cheesy Baked Gnocci Cheesy Baked Gnocci

Simple and delicious, we love making this dish to feed the soul. We hope you enjoy this dish from our home to yours. 

 

serves 2-3 

 

ingredients

olive oil

salt & pepper

knob of butter

1 carrot

1 clove garlic

1 brown onion

1 tin chopped tomatoes

1 tbsp tomato paste

1/3 cup beef or vege stock

1 packet gnocci

sprig of rosemary

sprig of thyme

150g bacon or 1 courgette

50g grated cheese

30g finely grated parmesan 

 

 

Step one

Finely chop the garlic, rosemary, thyme, brown onion and bacon and/or courghette. Grate the carrot.

 

 

Step two

In a large frying pan, heat a drizzle of olive oil over a medium to high heat. Add the onion, garlic, carrot, rosemary, thyme, bacon and/or courghette, and butter. Season with salt & pepper and cook until softened, 5-6 minutes.

 

 

Step three

While the veggies are simmering, heat a drizzle of olive oil in another large frying pan over a medium to high heat. When the oil is hot, add the gnocci in a single layer and fry until golden, 6-8 minutes. Add more olive oil if it sticks to pan. Season with salt & pepper.

 

 

Step four

Add tomato paste to the pan with veggies and cook while stirring for about a minute. Add tin of chopped tomatoes, butter and stock and season with salt & pepper. Stir to combine and keep simmering until fragrant, about 5-7 minutes.

 

 

Step five

Pre-heat the grill, spread the vege mixture over a medium sized oven proof dish and top with the fried gnocci. Top with the grated cheese, and finely grated parmesan. Grill for 5-10 minutes until cheese is melted and golden.

 

 

Step six

Divide the dish into serving plates - best served with a glass of red wine and sourdough of course!
